What was typical about this job.
The enquiry arrived with one unknown
Date, venue and guest count were fixed; the menu was not. We confirmed the framework first and built the menu together afterwards — not the other way round.
Lactose was the real question
The host wanted to know which dishes contained milk. Rather than removing dishes, we converted the buffet: korma with coconut milk instead of cream, curries without butter or yoghurt, rice without ghee. Only the naan stayed as it was, at her explicit request. No surcharge, and barely a difference in taste.
No power, no problem
The party was in a rear-courtyard garden. Our chafing dishes run on fuel paste, so the question of outdoor sockets and extension leads never arose — nor did the wet-weather fallback indoors.
Two tables, not one
For six warm dishes plus rice we advise 2 m × 80 cm, plus a second small table for plates, bread and papadom. Details like that are better settled beforehand than on the evening.
The invoice, unchanged.
We show it because "price on request" helps nobody plan a budget. The VAT split is the one that is correct for catering: food and its ancillary services at 7%, the pure rental of the chafing dishes at 19%.

What we changed because of it.
